With almost as many models of fryers available as there are menu items to cook in the oil, manufacturers are working more with end-users to engineer equipment that meets specific needs. Case in point, Vulcan co-developed its new compact, modular CEF Countertop Electric Fryers with Captain D’s (captainds.com), and the result is a “game changer,” according to Larry Jones, V.P. Operations Integration at the 500-plus-site seafood QSR chain. Rather than use the cabinet base for filtration, which is at most a twice-daily procedure, the freestanding CEF is designed to accommodate a refrigerator or freezer base to store the very foods that will go into the fryer up top. “Having come from a full-service background using chef bases beneath griddles, I knew that work flow and storage efficiencies would increase by applying the same methodology to a suite of fryers,” says Jones. But the CEF doesn’t just save time and effort, the 40-lb.-vat-size model is the first high-capacity commercial countertop fryer to be Energy Star rated, which can lead to rebates and incentives from power suppliers, says Jones. With the combined energy savings, improved efficiency with the cold storage option, plus simplified filtration to extend oil life, Jones adds, “we are committed to using [the CEF] for all new construction and are reviewing our existing portfolio for conversion opportunities.” Along with the 40-lb. vat size, Vulcan offers a 75-lb. vat size in this series; each unit comes with a large, 1.-in. drain valve and a quick disconnect hose and drain extension for fast, easy filtration. The CEF uses swing-up, ribbon-style electric heating elements to heat maximum surface area within the oil.
