Tastes change, and menus change, but the Baxter VersaOven rolls (or revolves) with these changes by adapting to a range of cooking needs. “The VersaOven provides flexibility in functionality without sacrificing food quality,” says Chef Michelle Bridges, Baxter’s Manager of Bakery/Culinary Support. The compact (48-in.W x 38-in.D x 75-in.H) yet powerful (95,000 Btu/hr. in-shot burner) can handle up to 40 3-lb. rotisserie chickens, then tackle 10 18 x 26 standard sheet pans of breads, followed by 5 12 x 20 x 2. steam trays of veggies. “The precision airflow and a rotating interior rack ensure perfectly consistent results with minimal operator intervention,” says Bridges. While the oven provides intuitive operation through a touchscreen interface, even complex recipes can be programmed with up to 6 cooking stages, all with uploaded custom product pictures leading the way. To keep things nice and tidy, the oven offers an automated wash system for a choice of either a 30-min. short wash to save downtime between batches or a 2-hr. heavy wash that can run overnight and has automatic chemical dispensing for user safety. “Operators are impressed by the time savings and costs savings,” adds Bridges. “They feel confident it can take the place of many pieces of equipment while reducing initial investment and operating costs and providing space savings in production areas.”

THE ART OF WINE
With the Silhouette Renoir, you can store and display up to 30 bottles of wine in a wall-mounted cabinet with a dramatic, temperature-controlled (54 F-63 F) environment. The FX Series convertible refrigeration drawer system has the drawer tracks outside the cooled compartment to provide optimal access to product with minimal exposure to cold and debris for extended wear life. The cold comes from an evaporator coil mounted horizontally above the drawer insert; refrigeration operates only when the drawer is closed to reduce energy use and humidity buildup.
