Dining services at Aurora—Otterbein Senior Life’s newly opened assisted living facility in Lebanon, Ohio—covers all the bases in senior living trends: dining as an experience, featuring farm-to-table fare with a focus on individually prepared foods and plenty of variety. One secret? Hoodless Evo display cooking griddles. “The Evo griddles let guests watch as chefs cook their food to order,” says Otterbein F&B Director Andrew Allen, who oversees 15 foodservice outlets for the 900-resident complex. Allen installed Otterbein’s first Evo griddle in 2015. “We wanted demonstration-style cooking at our [then] new restaurant, but a traditional grill with hood was way beyond our budget,” Allen recalls. Then his equipment dealer, Trimark SS Kemp, suggested Evo. The manufacturer makes griddles with integrated ventilation that pulls air across the cooking surface, passes it through a four-stage filter system that captures smoke and particulates, and then exhausts clean air. “We installed one hibachi griddle with seating for eight at the center of the restaurant. The first three months, we had more than 300 people reserving spots at the hibachi alone,” Allen says. Fast-forward to the Aurora’s opening in February. The 70-bed community includes dining on its second and third floors. Each dining area’s compact display kitchen features an Evo griddle, plus speed oven, hot/ cold wells and ample cold storage. “Residents’ menus now include made-to-order personal pizzas, stir-fries, omelets, pancakes and more,” Allen says. Pre-Evo, employees would’ve made meal components in advance at Otterbein’s central kitchen. “Because of the new dining experience, the Aurora currently has a waiting list.”
THERE’S A WIPE FOR THAT
