Veggie-centric Chain Will Spread Its Roots

A $15 million boost from the investment arm of Danny Meyer’s Union Square Hospitality Group will help Dig Inn, the vegetable-forward fast-casual chain, with some unconventional routes to expansion. Dig Inn plans a larger footprint in New York and Boston, a debut in Philadelphia and new locations outside of those markets. But the 26-unit chain also envisions opening a sit-down restaurant in Greenwich Village and an expansion of Room Service, the ghost-kitchen-meets-food-delivery concept it rolled out earlier this year in Lower Manhattan.
