Jollibee Launches Mobile Kitchen in Ontario

Jollibee’s newest concept will bring the brand’s most popular menu items to customers at the CF Lime Ridge Mall in Hamilton, Ontario—but it won’t last forever.

The Philippines-based fast-food chain announced it was taking the ghost kitchen to the next level with the debut of its first mobile kitchen in partnership with DoorDash. Jollibee and DoorDash collaborated on the movable concept that’s constructed out of a flatbed trailer.

The nearly 50-ft. trailer has been customized into a working kitchen that features state-of-the-art fryers, optimized utility connectivity and storage and refrigeration space. The mobile kitchen will allow the Jollibee brand to easily expand into new and existing markets without the overhead of a traditional brick-and-mortar restaurant.

“As we continue to expand our store network across Canada, the mobile kitchen provides the ideal platform to serve our customers in a more flexible and far-reaching capacity, especially in communities where we don’t yet have a physical store location,” says Maribeth Dela Cruz, president of Jollibee Foods Corporation North America and Philippine Brands, in a press release.

Customers will be able to order signature dishes like the jolly crispy chicken, jolly spaghetti and peach mango pie for pickup through the brand’s website or new mobile app or for delivery through DoorDash.

The mobile kitchen will remain at the CF Lime Ridge Mall for at least six months before traveling to another to-be-determined North American location. The first location will service the surrounding areas, including downtown Hamilton, Stoney Creek, McMaster University and Hampton Heights.

The announcement of the mobile kitchen comes as the brand continues to experiment with nontraditional locations. Last June, Jollibee debuted its first dedicated cloud kitchen in a Kitchen United space in Chicago.

The newest location debuts amid Jollibee’s North American expansion plans. Jollibee intends to expand throughout North America and reach 500 stores in the market by 2028, a significant increase from the 70 stores it currently operates across the continent.
